Taco Salad

One of my dear friends who I have known since I was in 7th grade came over last night. In honor of Kim's visit, we made something that we used to make all of the time when we were young - Taco Salad.

I could kick myself for not taking a picture of Kim to share with you. You will have to believe me when I tell you she still looks like a teenager.

Anyway, I've described this dish to adults I know now and at least one person in particular makes fun of it whenever possible.

"Dorito's in a salad?!? That's not right!"

To him I say, "don't knock it until you have tried it!"

Here's the recipe:

1 pound of ground turkey or hamburger (I used turkey) cooked and drained.
1 head of lettuce, chopped
Cilantro - chopped
Tomatoes - chopped
Black olives, sliced and drained
Shredded cheese
Avocado (the ones I had weren't ripe, so they didn't get added this time)
1 can Ranch Style beans, drain and reserve the liquid
Doritos Nacho Cheese flavored chips (crush some of the chips and add to the salad to your liking)

Basically combine everything above and then put the dressing below on.

Dressing:
Honey - about 2 tablespoons
Mayonnaise - about 2 tablespoons
Ketchup - about 2 tablespoons
Vinegar - about 1 tablespoons
Reserved liquid from beans

Mix these ingredients into a jar and shake, or mix up in a bowl. I keep tasting the dressing until it tastes "right." And honestly, if you didn't feel like making a dressing then you could use something like a French dressing.

Don't forget to drain the beans and reserve the liquid for the dressing.

Okay, Dorito's in a Taco Salad?....I'll try it! Love me some Dorito's! That can of Ranch Style beans reminds me of Texas. We ate those at family meals growing up. My father in law never tried them before he met me. I am giving this recipe a try Wendy. I love all the ingredients so I am sure it's tasty!
P.S. You look like you are a teenager girl!
